ez french onion soup!

3-4 medium yellow or sweet onions
1/2 stick buter
squirt of olive oil
tsp fresh ground black pepper
1tbls gran garlic
beef stock
1/4 - 1/2 cup sherry

croutons and swiss to garnish

let butter and olive oil heat in a soup pan
slice oniions to desired thickness 1/4”
toss onions in soup pan and brown onions completeley a few burned or towards blakened is ok
sweat down with 1/4 to 1/2 cup good sherry
let onions soften a bit
add water for soup beef base or
2 quarts beef stock

let simmer to marry essence’

serve with melted swill on top of crust or croutons
